Scientists turn tomatoes into rich source of vitamin D

With the help of genetic editing, tomatoes ripened in the sun could become sources of vitamin D – an essential nutrient usually found in animal products. That's what two studies reported on the Science portal show.
The body can synthesize vitamin D by sunlight, but many people have little exposure to the sun. In addition, age or darker skin may hinder synthesis. As tomatoes are naturally a precursor to vitamin D, two groups thought that some genetic adjustments could turn them into a source of vitamin of plant origin. The leaves and stems of fortified plants can also be useful because they can be used to manufacture vitamin D supplements.
In countries where vitamin deficiency is a problem, this can be a game changer, as well as helping vegans and vegetarians get enough of the nutrient. One of the roles of vitamin D is to help regulate how the body uses calcium, leading to stronger bones. In addition, there is some evidence that low levels are linked to increased risk of cardiovascular problems and other health problems.
